cc’s cold spaghetti pasta salad

this makes a bunch~about 8 servings~and it will keep up to four days~but we never have any left after 3 days~~

1/2 pound whole wheat spaghetti {or other pasta} undercook slightly {about 2 minutes less than normal} drain,rinse with cold water and put in colander with some ice cubes to stop the cooking process

one bell pepper

2 stalks of celery(single stalks, not the bunch)

1 med red onion

1 small can of black olives

4 to 5 cloves of garlic

i chop these with my gourmet quick chop 2000 from us jasco while the pasta is cooking {{and don’t forget to enter to win by august 15, 2009}}

when the ice has melted and the spaghetti is well drained, add the following mixture to the pasta

4 ounces of calantina dressing

4 ounces of zesty italian dressing

4 ounces of balsamic wine italian dressing (i use paul newman’s)

1 package of powdered zesty italian dressing seasoning mix

4 tablespoons of freshly ground italian seasoning

fresh herbs if available

then add 3 ounces of freshly grated parmesan cheese

then i add the chopped vegetables and pepperoni slices cut into 1/4 or diced if i can find a pepperoni stick

place in a airtight container and chill~~i sometimes need to add more dressing to make it moist

best served the next day{or later}  if you can stay out of it

garlic cheese biscuits

most everything i bake or cook i make from scratch~~the way my grandma did~and i love recipes which have lots of ingredients and steps ~just because i get into cooking so much

but one of the easiest, fastest recipes i have which it a favorite of most who eat my cooking

{and often requested when i ask ~what would you like me to bring}

i found several recipes and made my own one day after i had taken mom to her

bladder cancer dr~~we always treat ourselves to Red Lobster on those days~~

that night she said, “Charlene, i wish you would find out how to make those cheesy garlic bisctuits”

when i bake them {at least 2 times a week} i have found they keep well in an airtight container and just pop them in the microwave for a few seconds {less than 10 seconds and they are almost as great as when they come out of the oven~~

this is a easy to double recipe

it makes about a dozen or dozen  and a half biscuits

preheat over to 400 degrees

2 cups of “bisquick” baking mix  {i use “jiffy” baking mix because it is usually about a $1.00 cheaper and i like jiffy baking mix better}

1/2 teaspoon of garlic powder

2 teaspoons of baking powder

1 and 1/2 cup of cheddar cheese grated {i sometimes use the mixture cheese for different taste~they are great with hot mexican cheese}

1/2 teaspoon of dried oregano {when i use fresh oregano i double the amount and don’t use parsley}

1/2 teaspoon of dried parsley

mix the ingredients together by stirring several times

add between 2/3 and 1 cup of milk

mix until dough is “sticky”~~i add 2/3 cup of milk and then stir together with pastry cutter

most of the time i have to add the other 1/3

drop by spoon on greased cookie sheet {i use a serving spoon, scoop up the dough and use another spoon to drop the dough on the cookie sheet}

bake 10 minutes{they will just be starting to brown}

while they are baking

on the stovetop

melt a stick of butter

1/2 teaspoon oregano

1/2 teaspoon of parsley

1/2 teaspoon of garlic powder

after the biscuits have baked for 10 minutes, brush with the butter mixture {i really like to “soak” them~you could use less butter if you wanted to~why I don’t know~i am from the south and i like butter}

then place the butter soaked biscuits back in the over for 5 to 6 minutes until golden brown

after cooling i place them in an air tight container~~i’m not sure how long they will last because they are always gone after a couple of days~~~people will eat them over a chocolate chip cookie!

seasoning pack

i love to add seasoning to vegetables, meats, casseroles. basically everything but desserts

since mom had her heart attack in may, i have been even more aware of what i cook with and one thing that i have

used for years is a seasoning pack of fresh vegetables

i still use bacon, well because i am a southern cook, but i have reduced the amount of bacon i use in my pack

and of course, you can leave out someting if your family don’t like it

fresh vegetables add wonderful flavor to almost any dish~~and the color of the different vegetables adds to the eye appeal

so a couple of times a month i go to the store and/or the local farmers market and get the following:

  • one green bell pepper
  • one yellow bell pepper
  • one red bell pepper
  • one orange bell pepper
  • one large yellow onion (or two medium ones)
  • one purple onion
  • one bunch of celery
  • one whole garlic
  • several carrots(i use about half a package)
  • several serrano peppers (can use jalapenos~~remember to remove the seeds unless you want it to be hot)
  • one package of bacon or ham
  • any and all fresh herbs i can buy/get from my herb garden

up until a few weeks ago i did all my chopping by hand, but since mom ordered me the

i start by cleaning and chopping up the bell peppers~i chop each color in a different size just to make the dish i am cooking “more beautiful” usually about 1/4 to 1/8 inch size

then i chop up the onions about the same size as the colorfull bell peppers

when i chop the celery and carrots, i chop them really small~because they do take longer to cook and the smaller they are the more flavor they seem to release

i also chop the garlic really small, as well as the serrano peppers so it won’t overwhelm if you get a larger piece

i mix these together well then i add the bacon or ham and the chopped fresh herbs

i then take a measuring cup and fill several snack size freezer bags {i use anywhere for 1/2 bup to 1 cup roughly~i just fill some bags fuller and some about half full}

i spread the individual bags on a cooking sheet and pop in the freezer

the next day i put them in one of my lock and lock containers

anytime i need some seasoning, i open the freezer and grab a bag or two

people who come for dinner or ones i cook for are always amazed that i spent so much time

chopping!! yea, it really took a lot of time to open the freezer and grab my seasonging pack

even less time now i have a chopper i love and don’t have to chop all those veggies with a knife!!

it’s easy to use and easy to clean
